E.G.G.L.E.S.S
Ingredients A
200gm butter
160gm sugar
Ingredients B
200g milk
1tsp vanilla essence
Ingredient C
240gm plain flour
1 ¾ tsp baking powder
Topping
Adequate peaches, kiwi and strawberry
Adequate whipped topping cream
Adequate apricot gel
Adequate toasted almond flakes
Method
1. Cream Ingredients A until light
2. Add the Ingredient B in gradation, whipped until light and smooth.
3. Add ingredient C, mixed until well blended.
4. Pour it into 20cm round mould
5. Bake at 180oC for 50 minutes. Set aside to cool.
6. Cover the whole cake with whipped cream. Arrange the fruit on top as desire. Mixed apricot gel with some water and placed it on double boiler, stir cook until it has melted and used it to glaze the fruits.
7. Coat the side of the cake with toasted almond flakes.

BISCUIT BASE
200gm Oreo biscuits, finely crushed
50gm melted butter
Mix the biscuit base ingredient until well blended, press onto bottom of 20-23cm spring form tin. Refrigerate for 15 minutes or until firm. If you prefer the crispy base, you need to bake the biscuit base at 160oC for 10 minutes and set aside to cool. Wrap the outside pan with foil. Then fill in the cheese filling
CHEESE FILLING
A) 750gm Cream Cheese
130gm Sugar
B) ½ tbsp vanilla essence
C) 3 eggs
E) 15 pieces Oreo sandwich cookies, quarter
- Press the biscuit base onto the bottom of the grease 20cm spring form tin. Bake at 160oC for 10 minutes and set aside to cool.
- Cream (A) until smooth. Add (B) and cream until well blend
- Add (C) one at a time and cream until smooth
- Add (D) and cream until well combine. Add (E) and stir until well mixed
- Pour the cheese filling over the prepared biscuit base
- Bake at 160oC for 50 minutes or until centre is almost set. Turn off the oven and leave the cake cool in the oven with the door slightly open for 1 hour
- Run the small knife around the rim of the pan to loose the cake. Set aside to cool
- Cover the cake and refrigerate for 5 hour or overnight
- Ready to serve…..
